Dr. Diana Grigsby-Toussaint (PhD., University of Illinois at Chicago; MPH, Boston University) offers the core course in epidemiology and public health, and offers a graduate seminar in the determinants of obesity in the U.S.

Dr. Grigsby-Toussaint studies environmental influences on food consumption and preferences which may contribute to obesity. In particular she maps the location of supermarkets and other food establishments to gauge people's access to nutritious food especially in cities.
